A New Dinner Idea!

Hello!

I just wanted to take a minute to share a fantastic recipe that I tried. I have been trying to get back to eating the “Paleo” way.  I find when I eat Paleo my eczema clears up and I feel great! Also, I started to focus on loosing some weight and getting tonned up, which led to the search one night for a new healthy dinner idea. So, I pulled out my trusty “Practical Paleo” book and combed through it for a recipe that I hadn’t tried yet. I found the one for baked beets and thought I would give it a go. I have only ever ate beets that have been canned, so yummy! The dish was super easy to make, the only hard part about it was getting the beet juice stain off of my cutting board! LOL!

The recipe is really simple, it called for fennel and oranges (which I left out). Maybe next time I try it I will add those ingredients in. Anyways, this is all I needed for ingredients:

  • 2 large beets (I had three medium ones)
  • 2 tablespoons of oil or butter (I used a bit of coconut oil and butter)
  • Sea Salt and Pepper to taste

Then from there it was easy peasy! I peeled the beets and chopped them up in to little cubes. I pre-heated the oven to 375° and lined a cookie sheet with parchment paper. I put the cubed beets onto the sheet, drizzled them with melted butter and oil, and sprinkled on the salt and pepper.  I then put them in the oven for about 35 minutes, until they were tender.

They turned out awesome and were really tasty! I will definitely be doing that recipe again, not only because they tasted great, but because beets are packed with sooooooo many health benefits! Here is a list of some of them:
